Sweet Potato Soup with Gruyere and Fresh Thyme

Ingredients:

  • 4 Tbsp. unsalted butter

  • 1 small onion, diced

  • 5 cloves garlic, minced

  • 4 cups chicken or vegetable stock

  • 4 medium sweet potatoes, peeled and diced

  • 1 tsp. fresh thyme

  • 1/8 tsp. cayenne pepper

  • Salt and freshly ground pepper to taste

  • 1 cup grated Gruyere

Directions:

Melt butter in a large heavy bottom pot over medium heat. Add onions and garlic and saute, stirring occasionally, until translucent, 5-10 minutes. Add broth, thyme, cayenne salt, pepper, and sweet potatoes. Bring to a bowl and let cook until sweet potato is very soft, about 15 minutes.

Transfer soup to a blender or food processor and blend until smooth.

Return soup to the pot and heat on medium heat. Add gruyere and continue to cook until cheese has completely melted, stirring occasionally. Adjust seasonings and serve immediately.
