Almond Vanilla Granola

Yield: 12 cups | Active Time: 15 minutes | Total Time: 45 minutes

Ingredients:

  • 6 cups old-fashioned oats

  • 1 1/2 cups sliced almonds

  • 3/4 cup brown sugar

  • 1 tsp scant salt

  • 2 tsp ground cinnamon

  • 1/2 cup coconut oil

  • 1/3 cup honey

  • 2 Tbsp. vanilla extract



Directions:

Preheat oven to 325 degrees. Line two baking sheets with parchment paper and set aside.

Combine oats, almonds, brown sugar, salt and brown sugar in a large bowl. Set aside.

Meanwhile, combine honey and coconut oil in a small saucepan and heat over low heat until coconut oil has melted. Remove from heat and stir in vanilla then pour over dry ingredients and stir until well-combined. Spread the mixture evenly onto the two prepared baking sheet. Bake 30 minutes, stirring occasionally.

Let cool then transfer to an airtight container.
